This is not perfect but for now we replaced the cabinet we lost with a rolling cart that slides under our counter.
Our kitchen is pretty "non-optimal" in terms of being laid out functionally. This will hopefully make this better without a major overhaul.
EDIT: This is going to move higher on the list now because we will lose some cabinet space when our new oven/range gets installed 6/17.
